John Teeling founded Cooley distillery in 1987, resurrecting a closed industrial alcohol plant. His boldest move was creating Connemara — a peated Irish whiskey that the establishment considered heresy. But drinkers loved the combination of Irish smoothness and Scottish smokiness.
